Tasting Features: Blue nose, raspberries, a touch of black pepper and smoky notes combined with vanilla and flour. It’s a full-bodied wine; good harmony between alcohol, acid and ripe tannins. Many fruity aromas that mix with balsamic notes in your mouth. A touch of roasted almonds and flour.

Composition of varieties: 100% Refosk

Method of aging and production: Grape berries from the Sergashi position were fermented with the juice at temperatures between 25 and 28 ° C. After fermentation was completed, prolonged maceration followed for approximately 30 days. At the end of the maceration, we poured the wine into new French barrique oak casks where the wine was refined for the next 24 months. During the ripening in the barrique barrels, a biological breakdown has taken place. Due to the very structure of the wine, sulfur supplements are minimal.

Winemaking: In the peaceful village of Smarje near Koper, St. Mary on the Hill, in the heart of Slovenian Istria is the Ludvik Nazari Glavina vineyard and olive farm. Almost 24 hectares of vineyards and 5 hectares of olive groves begin the story of premium wines and the distinctive Shmar olive oil marketed under the Santomas brand. The owner's philosophy is based on respect for the tradition and Istrian cultural heritage and honesty in the relationship between agriculture and the environment.
