Vinification: The bunches are harvested in crates to prevent mashing and then carefully destemmed. Next, the fruit is gently pressed. The must obtained is allowed to settle and then ferments in temperature-controlled stainless steel tanks and partly in terracotta containers.
Ageing: The wine settles on the lees in the fermentation containers.
Appearance: light salmon pink
Nose: captivating, ranging from floral to mineral aromas. A weave of ripe pineapple, Percoca peach and papaya pulp with hints of Gallic rose, raspberry, light cinnamon and savoury notes of marine rock that convey a pleasant complexity.
Palate: well-structured, velvety and enveloping. Pleasant acidity that brings freshness and persistence. Currant notes in the finish.
Serving suggestions: Pleasant as an aperitif, it pairs perfectly to savoury as well as spicy food. Excellent match for oysters, spaghetti with fish roe and sea urchin, chicken tikka masala, sea asparagus or more simply fresh goat cheese.
