Les Terres Fines Blanc de Blancs Extra Brut Champagne Premier Cru
Adrien Dhondt's Les Terres Fines cuvée is a Blanc de Blancs champagne characterized by great delicacy.
It is a cuvée made only from Chardonnays from the Premier Cru terroir of Cuis, on the Côte des Blancs. A terroir renowned for its very chalky soil. The vineyard is on average forty years old, with a lower yield but a better concentration of aromas. This vineyard is worked in the organic way, with plowed soils and herbal treatments.
The grapes are harvested at optimal maturity, when pressing, only the first press (the cuvée) is used. The musts are vinified in barrels and then aged 8 months on fine lees.
The cuvée Les Terres Fines Dhondt-Grellet marries 70% of the wines of the year and 30% of wines coming from a perpetual reserve started in 1986.
Its dosage is Extra Brut (2g / l) in order to preserve a great freshness and a beautiful expressiveness.
