The fermentation takes place 100% in the steel. All wines at Stodden are 100% de-stemmed. At Stodden, fermentation is generally spontaneous and a little yeast is added to help in the final stage in order to achieve complete fermentation. The wine shows infinite delicacy on the nose, playful and yet powerful. Little wood, but still present. Raspberry, cherry, rose hip, sloe - all red fruits are present. Great acidity in the mouth, long reverberation, also with nice acidity and rock characteristics. Fine red currant with its great acidity, plus sloe, very tender sour cherry and distinctive forest raspberry and strawberry. The wine drinks extremely nicely.
