Colles is derived from "Kolos" and means "hilly wine country". The “Colles” plot facing south is the vineyard with the steepest terraces. The vines are rooted almost directly on the rock due to the small top layer made of opok. In order to be able to take solid roots in the hard subsoil, the Sauvignon Blanc vines were placed in holes about 50cm deep, which had been hollowed out with earth drills and filled with nutrient-rich organic humus.
