The Jaume de Codorniu Brut is a high expression cava. Its assembly of pinot noir and chardonnay are extracted from two exceptional vineyards. The chardonnay comes from La Pleta Vineyard, located in the most continental area of the DO Cava, characterized by an extreme climate with low rainfall, large thermal jumps and a shallow soil. The pinot noir comes from El Coster Vineyard, located in one of the coldest areas, on the north face of Prades Mountain. This situation gives it a special microclimate, cold due to its orientation but thanks to the gentle sea breezes, cool temperatures are achieved throughout the year. For the production of the Jaume de Codorniu brut, the grapes used have been pressed and destemmed, obtaining a must that will ferment in tanks at a temperature of 15 to 17ºC. Once the two varieties are assembled, it is bottled with a constant temperature aging in the underground cellars for more than 40 months. A perfect assembly where each variety brings unique characteristics. Thus the chardonnay gives structure, persistence in the mouth and density, and the pinot noir the delicacy and pleasant notes of red fruits.
