Château Canon-La-Gaffelière Les Hauts de Canon la Gaffelière 2016
Harvest from September 26th to October 15th at just over 40 hectoliters per hectare. The wine has been organically certified since 2014. 55% Merlot, 35% Cabernet Franc, 10% Cabernet Sauvignon. 30 days fermentation, 60% new wood. The floors consist of sand on calcareous clay. The switch to organic viticulture has resulted in the aroma of Canon la Gaffelière having changed significantly in the last 5-6 years. It has become much finer. Less difficult, much fresher. Mint dominates today. Cabernet Franc is at the forefront here too. Ripe, cooked raspberry and yet extremely fine acidity, derived from berry fruits. Radiating great delicacy, extremely aromatic. Very complex and broadly based. The blackberry is never fat, the currant is sweet. Raspberry marries with blackberry. That fits perfectly and is still fresh. This shows almost a bit of super ripe rhubarb, ripe orange and grapefruit. 2015 already had this radiance, dynamism and excitement. What makes the difference to 2015? 2016 may be a little more prancing, more playful, a little fancier in acidity, but at the same time massive, but ultra-mature, fine, polished tannins. The overall impression of higher freshness combined with greater depth is probably the main difference. We have two great wines in both vintages. But I believe that there is significantly more potential for aging in 2016. I would easily put my hand in the fire for 40 years or more. This is 2015 with a plus in freshness and ripe tannin intensity with similarly intense aromas. Everything very precisely. The tannic reverberation with a fine trace of salt and a clear minerality is also very beautiful. Difficult to differentiate 2015 qualitatively from 2016. In the long term, however, 2016 will be ahead. Perfect wine.
