From 100% Chardonnay, full bodied yet with elegant fruit backed up by minerals and good acidity known by the French as ‘gout de pierre a fusil’, or gunflint. Superb length, it really is classy stuff. No better wine for a plate of freshly oysters. Winemaker Didier Defaix's family owns 27 hectares in Chablis, and he is the 5th generation to look after these vines. Located on the slopes of the village Milly and on the right bank of the river Serein, the grapes in the Côte de Lechet are considered to create wines with exceptional ageing potential. The use of stainless steel during fermentation delivers a fresh and bright white which expresses citrus and mineral aromas reminiscent of gunflint. Didier Defaix comes from a long family tradition of vine-growers and is the son of Bernard Defaix. All aspects of production, from the vineyard to the winery, are undertaken by him and his family. For many years they have moved towards a sustainable and more ecological way of farming - which has resulted in them becoming fully organic.
