Arbois Chardonnay 2016
Aging over 10 months in a 350 liter barrel. Only 5% new wood. This is a very classic chardonnay. The Chardonnay comes briefly in stainless steel tanks before filling, before being filled as a cuvée. Delicate light gold. Like all wines currently at Domaine du Pelican, this is reductively developed. No oxidation, as is traditionally found in the Jura. It smells fragrant and honeydew melon peel, a little golden delicious, but rather fresh, not cut. Then add some fennel seeds. The palate has a very delicate tannin structure that glides along. Fine integrated acidity, so animating and fresh. Resting in itself. Wonderful wine with a little pineapple in the end. The wine is immensely rewarded for 2-3 years in bottle, as has now been shown. Then the fine yeast aroma comes out more and the wine becomes salty and fuller.
