Ziereisen Jaspis Chardonnay 2017
The wine is left to macerate overnight, after which it is pressed slowly with plenty of oxygen contact. Only 1.5 grams of residual sugar with 13% alcohol. There are only 2 barriques of this wine, one new, one used, left on the yeast for almost 2 years, working with the yeast is Hanspeter's masterpiece anyway, hardly anyone works as long as decorative iron with a long yeast storage, probably still bold from the Rheingau. The wine is astonishingly white-fruity in the mouth, white peach, white pear, but everything is not very ripe, but just as ripe, mirabelle, quince, light citrus touch, incredibly elegant and fine in its slightly greenish structure, it is important to read Chardonnay early and not overripe to keep the freshness. With little Oechsle in the fermentation to create these slim marvels that are so incredibly intense. An unbelievable strength wine, which is still totally slim and elegant, very long, minty-fresh. This Chardonnay Jasper doesn't have to hide behind Hubers Bienenberg GG or Heger's Gras in the oven, despite the age of only 25 years. One of the best Chardonnays in Germany. I am really excited. It is a pity that there is only so little quantity of it, we just get 120 bottles, but always there, because of only 2 barriques it is quite decent.
