Biodynamic vineyard work. Mashed on the shell and shell contact for a few days. Pressed, fermented spontaneously in the large open wood. Then leave on the fine yeast and aged in large wood for 2 years. Then 1 year bottle storage for the Ex Vero III. A cuvée of 50% Chardonnay with 50% Sauvignon Blanc. The names of the ex-veros result from the different steepness and barrenness of the locations. The I lies on sand and clay over rock in the area of the slope outlet, the II in the steep slope and the III in the uppermost, barren steep slope as well as the "Werlitsch". Nose marked by the skin, white Burgundy affinity. Spontaneous nose with biodynamics, somewhat oblique, very lush and dense. Grandiose depth with a hint of overripe, sourdough, very ripe pineapple and quince, ripe banana and passion fruit, raisins, acacia honey with extremely ripe honeydew melon. So is the mouth, a little reminiscent of Savagnin from the Jura, a little touch of Vin Jaune.
