Vinification: The grapes are carefully destemmed and left to macerate for a short period. Next, the fruit is soft crushed. The must obtained is then allowed to settle. The now-clarified must fermentes in temperatured controlled stainless steel tanks.
Ageing: After fermentation, the wine settles on the lees in the stainless steel containers for six months. The bottled wine is aged in temperature-controlled binning cellars for a minimum of two months.
Sensory characteristics: Appearance: straw yellow
Nose: Intense, broad and embracing. Distinct flower notes of orange blossom, jasmine and elderberry blend with white fruit, ripe apple and white peach, and yellow tropical fruit, pineapple and papaya. Warm hints of custard and candied fruit.
Palate: Full, complex, velvety. Soft attack with notes of pear and dried fruit enriched by the freshness of bergamot with balsamic and mallow hints. Good persistence and pleasant aftertaste of white and yellow fruit.
Serving suggestions: Good match with first courses, white meats, fresh cheeses and fish dishes.
