Jaeger Defaix Rully 1er Cru Rabource 2018
In October 2002, Hélène Jaeger-Defaix took over her first vineyard in Rully (South Burgundy) from her great-aunt Henriette Niepce. The domain was converted to organic farming methods in 2009. Hélène works with her husband Didier Defaix, who is also a winemaker in Chablis at Domaine Bernard Defaix.
The appellation of Rabourcé is located just on top of Cloux on the most sloping part of hillside. Here, the soils are mostly composed of white clay. The strong reflection of the sun favours the maturation process and this plot is always the first to ripen.
The cases of freshly picked grapes are emptied on a conveyor belt which "feeds" one of the wine presses. With this system, they can ensure that the grapes are undamaged during the sorting process. A gentle pressing allows them to extract the best juices. The fermentation as well as the malolactic fermentation occur in oak barrels. The wine then rests on its fine lees for 12 months. During this time, the lees are regularly moved by batonnage to give more body and flavour to the wine.This wine is made using 100% Chardonnay.
The Rabourcé is characterized by its richness on the mouth and its strength that give a great length. It has aromas of some pine, lemon and soft aromas showing through. The palate is persistant and evolves with a great depth.
This 6.5-hectare domaine in Rully attained its organic certification in 2015, only to lose it the following year when Helene Jaeger-Defaix opted to perform three chemical treatments in the hope of salvaging some of their harvest. Working with an enviable palette that emphasizes some of the commune’s most historically celebrated premiers crus, the peculiarity of the domaine is that the wines are actually vinified at Domaine Bernard Defaix in Chablis, over which Helene’s husband Didier presides. Fourth generation from a family of vine-growers, Bernard Defaix started with 2 ha in 1959. From this period, a method to protect the vineyard against spring frost was discovered. Thanks to this, the vine-growers could be sure to have a minimum of harvest every year and so they began to develop stable trade markets. The two sons of Bernard have been managing the domain since twenty years or so. Sylvain is in charge of the vinification, the ageing, the bottling and the preparation of orders. Didier takes care of the vineyard and the general management of the domain. Helene, Didier’s wife, looks after the administrative and the commercial part. So, from the vine to the final customer, the family looks after all the operations!
